Recipe Instructions: 1- Rinse the black beans and soak them in water overnight or for at least 6 hours. In a large pot, heat the olive oil over medium heat. Add the pork cuts and cook until browned on all sides. 2- Add the diced onion, minced garlic, bay leaves, cumin, and smoked paprika. Stir well and cook for about 5 minutes or until the onion is soft. Add the soaked black beans to the pot and enough water to cover everything by about 2 inches. Bring the mixture to a boil. 3- Reduce the heat to low, cover the pot, and simmer for about 2 hours or until the beans are tender. Season with salt and black pepper to taste. Serve the feijoada with rice, sliced oranges, farofa, and sliced collard greens, if desired.
