- . Grind the beef and lamb together once until it's consistent. Peel the onions and dice them very finely. You can also grate the onions using a fine grater. Press the diced or grated onions in a sieve or cheesecloth to drain the excess moisture.
- In a large bowl, mix in the ground beef mixture with diced onions. Add salt, black pepper, turmeric, and flour. Knead the meat well until it's sticky and reaches a paste like consistency. Cover the bowl with plastic wrap and allow the meat mixture to sit in the fridge for about an hour.
- Once the mixture has rested well, obtain it from the fridge. Prepare the skewers. Dab some water on your clean hands, grab a handful of the meat mixture (about the size of a small tomato) and mold it onto the skewer. Use your fingers and keep pressing the meat gently onto the skewers so it sticks well. To avoid falling apart during the grilling process, pinch the ends of the kabob onto the skewer.
- You can grill the kabobs either in the oven, over barbeque or heated grill. If you're planning to use the oven, preheat it to 400F. Place skewers on the high rack of your oven and allow them to grill for 15 minutes. Flip halfway through, and wait another 15 minutes. Repeat the process for a couple times until the kabobs have been cooking for 40 minutes in total. If you're going to use a barbeque or grill, place the kabobs onto the preheated tray and wait for them to cook for about 15 minutes. Flip over, wait another 15 minutes until both sides are grilled and golden brown, and the inner side is completely cooked. You can serve kabobs with traditionally cooked rice, lavash or pita bread.
