Instructions

  1. Heat the olive oil in a large pot over medium-high heat. Cut the sausage into pieces and put it in the pot.
  2. Allow one side of the sausages to brown for about 3 minutes. Then turn the sausage and cut it into pieces and let it cook until they are no longer pink. Transfer it to a paper towel-lined plate, pour the rendered fat into a saucepan over medium-high heat.
  3. You should have about a tablespoon of fat in the pot. Add a little more olive oil if needed or skim off some extra fat if too much.
  4. Add onion, carrot, celery and bell pepper and fry for about 6 minutes until soft, then add garlic and fry for another 1 minute.
  5. Pour chicken stock, tomato sauce, cherry tomato pieces and add Italian spices. Return the sausage to the pot and season with salt and pepper (you don't need too much salt).
  6. Put it on low heat and put the pot in the pot. Reduce the heat to medium low and let it boil for 5 to 10 minutes until the vegetables are almost soft.
  7. Add the rice grain pasta and put it in the pot and let it boil for about 8 minutes, stirring occasionally. (When you stir the soup, you will see that the pasta sticks a little to the bottom of the pot/this may happen, so stir) until it is almost cooked.
  8. Remove the pot from the heat. If you don't want the pasta to overcook and fall apart, add some ice (half a cup or more). Stir in fresh parsley and basil.
  9. You can serve the soup warm with Parmesan cheese.
