Instructions
- Heat the olive oil in a large pot over medium-high heat. Cut the sausage into pieces and put it in the pot.
- Allow one side of the sausages to brown for about 3 minutes. Then turn the sausage and cut it into pieces and let it cook until they are no longer pink. Transfer it to a paper towel-lined plate, pour the rendered fat into a saucepan over medium-high heat.
- You should have about a tablespoon of fat in the pot. Add a little more olive oil if needed or skim off some extra fat if too much.
- Add onion, carrot, celery and bell pepper and fry for about 6 minutes until soft, then add garlic and fry for another 1 minute.
- Pour chicken stock, tomato sauce, cherry tomato pieces and add Italian spices. Return the sausage to the pot and season with salt and pepper (you don't need too much salt).
- Put it on low heat and put the pot in the pot. Reduce the heat to medium low and let it boil for 5 to 10 minutes until the vegetables are almost soft.
- Add the rice grain pasta and put it in the pot and let it boil for about 8 minutes, stirring occasionally. (When you stir the soup, you will see that the pasta sticks a little to the bottom of the pot/this may happen, so stir) until it is almost cooked.
- Remove the pot from the heat. If you don't want the pasta to overcook and fall apart, add some ice (half a cup or more). Stir in fresh parsley and basil.
- You can serve the soup warm with Parmesan cheese.
