- If you use wooden skewers, soak them in water for at least 1 hour. (I like to soak overnight. I used eleven 20cm skewers).
- Heat a grill over medium-high heat to about 425 degrees.

- Grease both sides with a tablespoon of olive oil and season both sides with salt and pepper.
