Instructions
- Make the pale mixture : In a heavy-bottomed 6-cup saucepan set over medium-low heat, melt 2 tablespoons of butter. Add flour and stir for about 2 minutes until the mixture of butter and flour creates small bubbles with pale color.
- Stir the milk : Add 1 cup of milk (all at once) and stir until the sauce is smooth and lump-free. Mix remaining 1 cup milk (all at once), with salt and white or black pepper. Reduce the heat to medium and boil the sauce slowly until small bubbles appear on the surface and steam can be seen. Stir the simmering sauce for another 2 minutes, or until it thickens and no longer tastes like raw flour. The finished sauce should be thick and syrupy.
- Using or storing the sauce: Use immediately or store in a special container. Apply 1 teaspoon of butter on the surface of the hot sauce so that a skin does not form. Cool the sauce for 10 to 15 minutes before putting it in the refrigerator or freezer, cover with a lid. Your bechamel sauce is ready.
