Instructions
- If you cannot find store bought Doogh, you'll need to make it at home. Pour three cups of unsweetened, unflavored plain yogurt inside a large bowl. Add a teaspoon of salt and mix well with a fork to break down any lumps. Then add a cup and a half of cold water bit by bit and keep stirring until the yogurt drink reaches the perfect consistency. It shouldn't be too thick or too thin.
- Peel the cucumbers and dice them into fine pieces. If the cucumbers are tender and the skin is delicate, you can simply skip the peeling and dice them with the skin on.
- Wash the herbs carefully and allow the excess water to drain. You can also spread them on a kitchen towel to take away the excessive moisture. Chop them finely using a kitchen knife. Put the herbs and the diced cucumbers in a large bowl, and add the Doogh. If you haven't salted the Doogh before, add a teaspoon of salt and stir well.
- Add the ground oregano and mint to the yogurt mixture and stir. Dunk a block of ice in to keep the cold cucumber yogurt cool. You can also add crushed walnuts, raisins and a clove of grated garlic to your Aab Doogh Khiar. This one depends on your own preference. You can either add the crunchy bread pieces to the Doogh about 5 minutes before serving to let them soak, or serve them at the side of Aab Doogh Khiar.
